History

Gemischter Satz was the traditional Vienna vineyard practice for centuries: plant Gruener Veltliner, Riesling, Welschriesling and Pinot Blanc together in one plot, harvest and press in one go. The practice nearly died out in the 1980s, but the WienWein winemakers' association of Doebling and Stammersdorf growers revived it in 2006, securing a DAC protected-origin in 2013. The wine now defines Vienna's wine identity on the Heuriger pour list.

Ingredients

  • 1 bottle entry-level Wiener Gemischter Satz DAC (Wieninger Wien 1 or Mayer am Pfarrplatz)
  • 1 bottle single-vineyard Wiener Gemischter Satz (Mayer Nussberg Alte Reben or Wieninger Bisamberg)
  • 300g Liptauer cheese spread (recipe below)
  • 200g Topfen (quark) or full-fat cream cheese
  • 1 tsp Hungarian sweet paprika
  • 1 tsp caraway seeds, lightly crushed
  • 1 tbsp baby capers, finely chopped
  • 1 tbsp Dijon mustard
  • 1 small onion, finely diced
  • 1 small bunch chives, chopped
  • Salt and pepper
  • 1 country sourdough loaf
  • 200g radishes, halved
  • 200g cornichons
  • 200g Verhackertes (Carinthian bacon spread) or rillettes
  • 200g Bergkaese or aged Goudawith mountain cheese

Method

  1. Stand both bottles upright in the fridge for 6 hours. Wiener Gemischter Satz serves cold but not iced; 8 to 10C is the target.
  2. For the Liptauer spread, mash the Topfen with the paprika, caraway, capers, mustard, diced onion and chopped chives. Season with salt and pepper. Chill for 30 minutes for the flavours to meld.
  3. Slice the country bread thickly and toast lightly under the grill.
  4. Arrange the Liptauer, radishes, cornichons, Verhackertes and Bergkaese on a wooden board.
  5. Pour 80ml of the entry-level Gemischter Satz into Riesling-style glasses. Taste neat first; notes of stone fruit, lemon zest and the dusty mineral signature of the Vienna gravel soils.
  6. Smear toast with Liptauer, take a bite, take a sip of wine.
  7. Move to the single-vineyard bottle. Note the deeper texture, the longer finish, the wider aromatic range from the higher-altitude blend of grapes.
  8. Eat through the board with both wines, comparing how each cheese, spread or pickle changes them.

Tip from the editors. Wiener Gemischter Satz is a field blend, so each Heuriger's bottle tastes slightly different from the next. Buying two from neighbouring producers is the proper way to taste.
