History

The galeto belongs to the Italian-settled south of Brazil, where small chickens replaced the birds of the Italian passarinhada. Galeto ao primo canto, from the Caxias do Sul area, is named for a chicken of about 25 days; Galeteria Peccini, opened in February 1931 for the first Festa da Uva, is named as the first to sell it. In Rio, Riotur describes Galeto Sat's birds as slaughtered at up to 25 days, about 700g, and recognised the house as Carioca cultural heritage in 2022.

Ingredients

  • 2 young chickens of about 700g each, split open along the backbone and flattened
  • 3 limes
  • 6 garlic cloves
  • 1 orange
  • 4 tablespoons oil
  • Salt and black pepper
  • To serve: rice, farofa and fried potatoes

Method

  1. Crush four of the garlic cloves with salt and rub the chickens with the paste, lime juice from two limes and pepper; marinate for 1 hour.
  2. Make the sauce by mixing the juice of the last lime and the orange with the remaining garlic, crushed, and the oil.
  3. Grill the chickens skin side down over moderate embers (or in an oven at 220C) for 25 minutes.
  4. Turn and cook for 20 to 25 minutes more, until the thigh juices run clear and the skin is crisp.
  5. Rest for 5 minutes, cut in pieces and serve with the sauces.

Tip from the editors. Flatten the birds evenly so the legs and breast finish together, and keep the embers moderate or the skin burns before the thigh cooks.
