History

The andruty kaliskie tradition is documented in Greater Poland from at least 1873 in Kalisz, the regional town 130km south of Poznań. The European Union granted the wafers Protected Geographical Indication status in 2009 under the same scheme that protects rogal świętomarciński. The thin sugar-wafer format crossed into Poznań cake counters by the late 19th century and is now sold at Cukiernia Kandulski and Cukiernia Sowa alongside the croissants.

Ingredients

  • 200g plain flour
  • 200g caster sugar
  • 200g melted unsalted butter, cooled
  • 200ml whole milk
  • 4 eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method

  1. Whisk the eggs and sugar in a bowl until pale.
  2. Whisk in the melted butter and milk.
  3. Sift in the flour and salt, add vanilla, and whisk to a smooth pancake-batter consistency.
  4. Rest the batter 30 minutes at room temperature.
  5. Heat a pizzelle iron or a flat wafer iron to medium-high.
  6. Drop a heaped tablespoon of batter onto the centre of the lower plate, close and press firmly. Cook 60 to 90 seconds until pale gold.
  7. Lift the wafer off with a knife while still hot and lay flat on a wire rack; it crisps as it cools.
  8. Stack between sheets of greaseproof paper. They keep two weeks in a sealed tin.

Tip from the editors. The wafers must be lifted off the iron the moment they are golden or they snap when bent.

Tip: Eat the karpatka or sernik on weekdays; the rogal bydgoski here is Bydgoszcz's PGI workaround, not a certified rogal świętomarciński.
