Karak chai · Abu Dhabi

Karak chai is strong black tea boiled with milk and spices, popularised in the Gulf by South Asian communities. On Hudayriyat Island a food truck is known for its karak.

Masala chai, spiced tea boiled with milk, comes from India, where tea became a mass drink after the Indian Tea Association's early 20th-century campaign, and independent vendors added spices, milk and sugar. In the Gulf it is called chai karak, and the drink was popularised by South Asian expatriate communities in the region. At Zaatar and Karak on Hudayriyat Island, Yalla Abu Dhabi says the spiced karak is what keeps people coming back, and Meylas's founder pairs her chebab with spiced milk tea.

Karak chai · Dubai

Karak chai is Dubai's default drink: black tea boiled hard with evaporated milk, sugar and cardamom, poured from a height into a small cup and sold for a few dirhams.

Karak arrived with South Asian workers who brought masala chai to the Gulf, then adapted it to what the cafeterias stocked: strong dust grade tea, evaporated or condensed milk instead of fresh, heavy sugar and a bruised cardamom pod. The word means strong. It spread from labour camps and roadside cafeterias into every layer of the city, and the ritual of queueing by car outside a window on Jumeirah Road while a waiter brings the cups to the car is a Dubai institution rather than a novelty. Prices stayed near a dirham for decades, which is part of why karak became the one thing the whole city drinks the same way.
