Douai (brewing and Douaisis producers) ★ 3.8

Douai puts its brewers and its farmers together at the Arkéos museum park, where the Houblonnades weekend runs tastings and a producers' market.

Tip: The event is free and starts at 17:00. Outside festival weekends the museum park is still worth the trip.

Dunkerque (potjevleesch and the Minck) ★ 4.2

Dunkerque claims potjevleesch as its own, and its Place du Minck stalls sell the morning's catch straight off the boats alongside waterzooi and flamiche.

Tip: The aubettes on Place du Minck trade in the morning. Come for the fish before you sit down to lunch.

Wambrechies (genièvre) ★ 4.3

Wambrechies holds one of the last French genièvre distilleries, working a near-unchanged process on the Deûle since an oil mill was converted in 1817.

Tip: Guided tours are suspended for building works, but the shop stays open Tuesday to Sunday.

Cassel (Flemish estaminets) ★ 4.5

Cassel sits on the highest of the Flanders hills, and the estaminets on its cobbled square serve potjevleesch cold with frites and beer-cooked carbonade.

Tip: Potjevleesch means little pot of meats, and it arrives cold with hot frites. That is correct, not a mistake.

Bergues (Flemish cooking) ★ 4.2

Bergues keeps its ramparts and its estaminets, where carbonade flamande is simmered in beer and pain d'épices and welsh arrives with homemade frites.

Tip: Combine it with Dunkerque, which is twenty minutes further on and has the fish stalls.
