History

Chattanooga Whiskey, founded in 2011 under the banner of bringing whiskey back to the people, opened the city's first legal distillery in more than a century and coined Tennessee High Malt, a house style built on mash bills heavy with specialty malts. The style's toasted, chocolatey depth made the Old Fashioned its natural showcase, and the drink is now the house serve across the Southside's bars, from the distillery's own counter to hotel rooftops.

Ingredients

  • 60ml Tennessee High Malt whiskey or another malt-forward bourbon
  • 1 sugar cube or 5ml rich syrup
  • 3 dashes aromatic bitters
  • Orange peel
  • 1 large ice cube

Method

  1. Muddle the sugar with the bitters and a bar spoon of water in a rocks glass until dissolved.
  2. Add the whiskey and the large ice cube.
  3. Stir 20 to 30 seconds until the outside of the glass chills.
  4. Express the orange peel over the surface, wipe the rim and drop it in.
  5. Serve without a straw and let dilution open the malt over the first minutes.

Tip from the editors. Skip fruit beyond the peel; a malt-forward whiskey already brings the chocolate and toast a muddled orange would only muddy.
