Şöbiyet is the variant Gaziantep bakers use to show off, because kaymak inside a syruped pastry is unstable and has to be sold the same day. It is a twentieth-century refinement rather than an old form, and it has become the default request at every counter in the city. Baklavacı Zeki İnal, a family shop on Atatürk Bulvarı, makes it by hand in small batches and routinely sells out before midday, which is the clearest signal of how the city ranks it. Ordering a mixed tray without at least one şöbiyet is considered a beginner's mistake.

Ingredients

  • 400g plain flour
  • 2 eggs
  • 200ml water
  • 1 tsp salt
  • 150g wheat starch, for rolling
  • 300g clarified butter, melted
  • 250g raw green pistachios, ground
  • 250g kaymak or thick clotted cream
  • 700g caster sugar
  • 500ml water, for syrup
  • 1 tbsp lemon juice

Method

  1. Boil sugar, water and lemon juice for 10 minutes to make the syrup and leave it to go completely cold.
  2. Knead flour, eggs, water and salt into a firm dough, rest for 30 minutes, then divide into 12 balls.
  3. Roll each ball paper thin using wheat starch, stacking with butter between the sheets.
  4. Cut the stacked sheets into 10cm squares.
  5. Put a spoon of kaymak and a spoon of ground pistachio in the centre of each square.
  6. Fold three corners into the centre to make a triangle and press the seams together.
  7. Arrange in a buttered tray, pour the remaining clarified butter over and bake at 175C for 35 to 40 minutes until golden.
  8. Pour the cold syrup over the hot pastries and rest for 2 hours before serving.

Tip from the editors. Eat şöbiyet on the day it is made. The cream inside means it will not keep the way a plain baklava does.
