History

The smashed patty came out of American griddle culture and swept LA during the pandemic pop-up era; Heavy Handed started as one of those pop-ups before opening on Main Street in Santa Monica, smashing short-rib-blend patties, frying in beef tallow and finishing with Straus soft serve. The style is now the city's default casual burger.

Ingredients

  • 600g coarsely ground beef, 20 percent fat, in 8 loose balls
  • 8 slices American cheese
  • 4 soft potato buns
  • Half a white onion, sliced paper thin
  • Pickles, mustard, mayonnaise
  • Salt, neutral oil

Method

  1. Heat a cast-iron pan or plancha until it just smokes.
  2. Drop 2 beef balls in, top with onion slivers, and smash flat and hard with a spatula for 10 seconds. Salt generously.
  3. Flip after 2 minutes when the crust is deep brown, cheese both patties, stack them and pull after 45 seconds.
  4. Serve on toasted buns with pickles, mustard and mayo; repeat for the rest.

Tip from the editors. Smash once, immediately, and never again; pressing later squeezes out the juice you built the crust to keep.
