History

The samoosa came to the Cape twice over: with people enslaved and exiled from Bengal and the Indonesian archipelago from the 1650s, and again with Indian traders and labourers arriving from the 1860s who set up the roti and masala counters that Athlone and Rylands still run. South African samoosas are smaller than Indian ones, wrapped in a thin flour pastry rather than a thick shortcrust, and fried rather than baked. In Bo-Kaap they are sold alongside daltjies, the chilli-bite fritters of gram flour and spinach that are the other half of any Cape Malay snack box.

Ingredients

  • 24 samoosa pastry strips, about 8cm wide, thawed if frozen
  • 400g lean beef or lamb mince
  • 1 onion, very finely chopped
  • 3 garlic cloves and 2cm ginger, grated
  • 2 tsp mild masala, 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp turmeric
  • 1 green chilli, finely chopped
  • Small handful each of fresh coriander and mint, chopped
  • 2 tbsp sunflower oil, 1 tsp salt
  • 2 tbsp cake flour mixed with 2 tbsp water, as glue
  • Sunflower oil for deep-frying, about 1L

Method

  1. Fry the onion in the oil for 6 minutes, add the garlic, ginger, chilli and dry spices and cook 1 minute.
  2. Add the mince and the salt and fry for 10 minutes, breaking it fine, until dry with no liquid left in the pan. Stir in the herbs and cool completely.
  3. Fold a pastry strip into a cone at one end, spoon in a heaped teaspoon of filling, then keep folding along the strip in triangles.
  4. Seal the last flap with the flour-and-water paste and press the edges firmly so no filling escapes.
  5. Heat the oil to 175C and fry six at a time for 3 minutes, turning once, until evenly golden.
  6. Drain on a rack and serve hot, with a tamarind or mint chutney.

Tip from the editors. The filling must be cold and dry before it goes near pastry: warm or wet mince steams the pastry open in the oil every time.
