History

Rujak is a fruit salad of Javanese origin, its name from an Old Javanese word for chopping into small pieces. Bali's version dresses the fruit with a broth of boiled tongkol, a small tuna, pounded with chilli, salt and shrimp paste. Fruit rujak with pindang broth is hard to find outside Bali, and Warung Men Runtu in Sanur is one of its best-known sellers. Denpasar warungs often sell it beside rujak bulung, a seaweed rujak, and tipat cantok.

Ingredients

  • 100g unripe mango, thinly sliced
  • 100g half-ripe papaya, thinly sliced
  • 100g salak (snake fruit), thinly sliced
  • 100g apple, thinly sliced
  • 3 small pindang fish (salted, cooked tuna-type fish)
  • 1 lemongrass stalk and 3 kaffir lime leaves
  • 4 bird's-eye chillies
  • 1 tbsp toasted shrimp paste (terasi)
  • 1 tsp salt and 2 tbsp sugar

Method

  1. Rinse the pindang fish, discard the heads and guts, and simmer with the lemongrass, lime leaves, a pinch of salt and 500ml water for 15 minutes. Strain and cool, keeping 100ml of the broth.
  2. Pound the chillies, 1 tsp salt and the shrimp paste to a smooth paste in a mortar, then work in the sugar.
  3. Pour in the cooled broth, stirring, and taste for salt and heat.
  4. Toss the sliced fruit in the dressing and chill before serving.

Tip from the editors. If you cannot find pindang, simmer a few chunks of salted skipjack or canned tuna in brine the same way.
