History

Prokupac was the everyday Serbian house red through the 19th and 20th centuries before falling out of favour during Yugoslav-era state production. The 2010s revival, led by small producers in Zupa, Toplica and Tri Morave, repositioned Prokupac as the Serbian flagship at international competitions. Belgrade wine bars now pour Prokupac flights as a national signature.

Ingredients

  • Bottle of varietal Prokupac (Ivanovic or Tikves)
  • Bottle of Prokupac blend (with Cabernet or Merlot)
  • Bottle of Tamjanika (Serbian indigenous white)
  • 4 medium red wine glasses
  • Hard sheep cheese (Plovdiv-style)
  • Air-dried sausage (Pirot peglana)

Method

  1. Open both Prokupac bottles 30 minutes before tasting to let them breathe.
  2. Pour 50 ml of the varietal Prokupac into each glass. Note the sour cherry and herbal notes.
  3. Compare with the Prokupac blend, noting how the international varieties round out the angularity.
  4. Switch to the Tamjanika white for contrast: aromatic, floral, off-dry.
  5. Pair with sheep cheese for the Prokupac and dry sausage for the blend.
  6. Discuss what makes Prokupac the canonical Serbian wine: regional, indigenous, not international-style.
  7. Keep notes on which bottle you'd carry home.

Tip from the editors. Look for Ivanovic, Despotika or Tikves producers for the canonical Prokupac varietal expression. Most Belgrade wine bars stock at least two.
