History

Genoa's tourist office calls pansoti a fairly recent invention, a variant of the meatless ravioli di magro, and the name comes from their pot-bellied, bundle-like shape; along the Rivieras they are also made as triangles or half-moons. Walnut sauce, sarsa de noxe in dialect, is recognised as a traditional Ligurian food product and is made with prescinsêua, the tangy Genoese curd that also goes into the filling. Butter and sage is the simpler dressing the tourist office suggests.

Ingredients

  • 450g plain flour
  • 1 egg
  • 1 glass dry white wine
  • 250g borage
  • 250g chard or mixed wild greens
  • 150g prescinsêua, or ricotta mixed with a spoonful of yoghurt
  • 2 eggs and 50g grated Parmigiano for the filling
  • Marjoram, nutmeg and salt
  • For the sauce: 150g shelled walnuts, 1 garlic clove, a slice of bread soaked in milk, 3 tbsp prescinsêua, 4 tbsp olive oil

Method

  1. Knead the flour with the egg, the wine and a pinch of salt to a smooth dough, roll it about 3mm thick and keep it covered.
  2. Boil the greens, squeeze them dry and chop finely, then mix with the prescinsêua, eggs, Parmigiano, marjoram, nutmeg and salt.
  3. Cut the pasta into 5cm squares, put a teaspoon of filling on each and fold into a triangle, pressing the edges to seal.
  4. For the sauce, blanch and skin the walnuts if you can, then pound or blend them with the garlic, the squeezed bread and the prescinsêua, loosening with oil to a thick cream.
  5. Boil the pansoti in salted water for about 10 minutes, drain with a slotted spoon and dress with the sauce thinned with a little cooking water.

Tip from the editors. If the walnut sauce is too thick to coat the pasta, loosen it with a spoonful of the cooking water before tossing.
