Salt's Cure created its oatmeal griddle cakes in the original restaurant, and the recipe grew a following big enough that the group opened Breakfast by Salt's Cure as a dedicated daytime counter, including the Montana Avenue room in Santa Monica. The shop sells the dry mix to take home and runs gluten-free and vegan variations daily.

Ingredients

  • 150g rolled oats
  • 250ml buttermilk
  • 100g plain flour
  • 2 tbsp brown sugar
  • 1 tsp baking powder
  • Half tsp baking soda
  • Half tsp salt
  • 1 egg
  • 60g melted butter, plus more for the pan
  • Maple syrup and salted butter to serve

Method

  1. Soak the oats in the buttermilk for 15 minutes so they soften.
  2. Whisk in the egg and melted butter, then fold in the dry ingredients until just combined.
  3. Griddle generous spoonfuls in butter over medium heat, 3 minutes a side, until the edges crisp and the centres set.
  4. Stack and serve with salted butter and maple syrup.

Tip from the editors. The batter should look too thick; thin it with a splash of buttermilk only if the cakes refuse to spread at all.
