History

The mojito traces back to 16th-century Havana, when British naval surgeon Sir Francis Drake reportedly mixed a similar drink to combat sailors' scurvy on the Cuban coast. The modern formula codified in early 20th-century Havana at La Bodeguita del Medio, where Ernest Hemingway famously kept a regular table. Miami's Cuban exile community brought the cocktail north in the 1960s; today every Calle Ocho bar runs one, with Versailles and La Carreta among the canonical addresses. The canonical garnish is hierbabuena, a Cuban mint variety.

Ingredients

  • 10 to 12 fresh mint leaves (preferably Cuban mint or hierbabuena; English spearmint works but spearmint is sharper)
  • 2 tsp white granulated sugar (or 15ml simple syrup)
  • 30ml fresh lime juice (about 1 lime)
  • 60ml white rum (Bacardi Superior, Havana Club Anejo Blanco, or Don Q Cristal)
  • Crushed ice to fill
  • About 90ml chilled sparkling soda water (top off)
  • 1 lime wheel and 1 fresh mint sprig for garnish
  • Optional: 2 drops Angostura bitters (a contemporary Miami touch)

Method

  1. Place the mint leaves and sugar in the base of a tall Collins glass (or a pint glass).
  2. Press the mint gently with a muddler or the back of a wooden spoon, just enough to release the oils; do not pulverise (this is the structural step; over-muddled mint releases bitter chlorophyll).
  3. Add the fresh lime juice and stir until the sugar starts to dissolve.
  4. Pour in the white rum.
  5. Fill the glass to the top with crushed ice; stir briefly with a bar spoon to chill and integrate.
  6. Top with chilled sparkling soda water to within 1cm of the rim.
  7. Add a final crown of crushed ice if room allows.
  8. Garnish with a lime wheel slipped down the inside of the glass and a tall fresh mint sprig standing tall.
  9. Add the optional 2 dashes of Angostura bitters across the top (modern Miami touch). Serve immediately with a paper or metal straw and a small spoon for stirring.

Tip from the editors. Muddle the mint very gently; bruising releases oils, pulverising releases bitter compounds. Use crushed ice (not cubes); the rapid dilution and the cold are part of the structural texture. Cuban mint (hierbabuena) is more delicate and fragrant than spearmint; if you have access to a Cuban grocer or grow your own, it makes a noticeable difference.

Tip: The ventanita pours strong cafecito at any hour; the dining room is quieter than Versailles next door.
