History

Migas in central Texas is a working-kitchen rescue of stale tortillas, dating to early 20th-century Mexican-American homes. The Austin restaurant version was canonised at Cisco's on East 6th Street in the 1950s and Magnolia Cafe in the 1980s. Veracruz All Natural's migas taco, served on a homemade corn tortilla, became the national reference plate; Food Network named the Veracruz migas one of the country's five best tacos in 2016. The dish is now Austin's defining breakfast plate.

Ingredients

  • 4 large eggs
  • 4 corn tortillas, cut into 1cm strips
  • Half a small onion, diced
  • Half a jalapeno, diced
  • 1 small Roma tomato, diced
  • 60g shredded Monterey Jack and Cheddar
  • 3 tablespoons neutral oil
  • Half a teaspoon salt
  • Flour tortillas, warmed, to serve
  • Salsa or hot sauce, for the table

Method

  1. Heat the oil in a 25cm skillet over medium-high heat. Fry the tortilla strips until golden and crisp, 3 to 4 minutes. Pour off all but a tablespoon of oil.
  2. Add the onion and jalapeno to the pan. Cook 2 minutes until soft.
  3. Beat the eggs with the salt in a bowl. Pour into the pan with the vegetables and tortilla strips. Stir gently with a rubber spatula on medium-low heat.
  4. When the eggs are still slightly glossy, add the diced tomato and cheese. Stir once and pull from the heat.
  5. Spoon onto plates with warm flour tortillas, or fold straight into tortillas as tacos. Hit with salsa at the table.

Tip from the editors. The tortilla strips need to stay crispy through the egg cook, so do not overcook the eggs once the chips go in.
