History

Loukoumades trace their lineage to ancient Greek honey doughnuts called enkrides, written about by Athenaeus in the 3rd century AD. The modern Athens loukoumades shop is Krinos on Aiolou, fried on the same recipe and decor since 1923. Lukumades on Aiolou is the modern reinvention since the 2010s, with cream fillings and chocolate toppings. The classic order remains a portion of nine round doughnuts with honey, cinnamon and a Greek coffee on the side.

Ingredients

  • 250g plain flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 300ml warm water
  • Sunflower oil for deep-frying
  • 200g Greek honey, warmed
  • Ground cinnamon
  • 50g chopped walnuts (optional)

Method

  1. Whisk flour, yeast, sugar and salt in a bowl. Pour in warm water, whisk smooth. Cover and rest 1 hour in a warm spot until doubled and bubbling.
  2. Heat oil to 170 C in a deep pan.
  3. Wet two teaspoons or a small ice-cream scoop. Scoop the wet batter and drop into the oil. Fry in batches, turning, for 3 to 4 minutes until deep golden.
  4. Drain on paper. While still hot, drizzle generously with warm honey, dust with cinnamon and scatter chopped walnuts.
  5. Serve immediately, before the syrup cools.

Tip from the editors. The batter should be wet and sticky, not dough-like. If you can roll it in your hands it is too thick; add more water.
