History

Snow City Cafe opened in 1998 on 4th Avenue and named its signature Benedict after the Kodiak Island fishing community. The dish pairs Alaska king crab from the Bristol Bay fishery with panko-breaded crab cakes, poached eggs and house hollandaise. It's the most-photographed plate downtown, lauded by Food Network's Diners, Drive-Ins and Dives feature in 2007.

Ingredients

  • 230g Alaska king crab meat, picked over
  • 60g panko breadcrumbs plus 30g extra for coating
  • 1 large egg
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Old Bay seasoning
  • 2 English muffins, split and toasted
  • 4 large eggs for poaching
  • 1 tbsp white wine vinegar
  • 115g unsalted butter for hollandaise
  • 2 egg yolks, 1 tbsp lemon juice, salt and cayenne for hollandaise

Method

  1. Mix the king crab, 60g panko, beaten egg, mayonnaise, mustard and Old Bay in a bowl. Form into 4 cakes.
  2. Roll each cake in the extra panko and chill 10 minutes.
  3. Pan-fry the cakes in butter over medium heat for 3 minutes per side until golden.
  4. Bring a saucepan of water to a low simmer with the vinegar. Crack each egg into a ramekin and slip into the water. Poach 3 minutes until the whites are set.
  5. Whisk the yolks, lemon juice and 1 tbsp water in a heatproof bowl over a saucepan of simmering water until pale and thick.
  6. Slowly drizzle in the melted butter while whisking until the hollandaise emulsifies. Season with salt and a pinch of cayenne.
  7. Place a toasted English muffin half on each plate, top with a crab cake, then a poached egg, then a spoonful of hollandaise. Garnish with chopped green onions.

Tip from the editors. Pick the king crab carefully for shell fragments. The Snow City Cafe version uses panko-breaded crab cakes that hold their shape, so do not over-thin with mayonnaise.
