History

Kibinai (or kybyn) came to Lithuania with the Karaim community brought from Crimea to Trakai in 1397 by Grand Duke Vytautas. The pastry has stayed in the Karaim community of Trakai ever since, with mutton the original filling. In Vilnius, Pinavija and Halės Turgus carry the pastry; for the canonical version travellers cross to Trakai itself, where Kybynlar (Karaimų 29) and Senoji Kibininė sit by the lakeside castle.

Ingredients

  • 500 g all-purpose flour
  • 200 g cold butter, diced
  • 2 eggs (1 for dough, 1 for egg wash)
  • 100 ml sour cream
  • 1 tsp salt
  • 400 g minced lamb (mutton if available)
  • 1 large onion, finely chopped
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • Salt to taste
  • 2 tbsp water (for filling juiciness)

Method

  1. Combine flour and salt in a bowl. Cut in cold butter until the mixture resembles coarse breadcrumbs.
  2. Mix 1 egg with sour cream; add to the flour mixture. Knead briefly until smooth. Wrap and chill for 30 minutes.
  3. For the filling, mix minced lamb with chopped onion, paprika, salt, pepper and 2 tablespoons of water. Mix well; set aside.
  4. Roll the dough to 3 mm thick. Cut into 8 large circles, approximately 15 cm in diameter.
  5. Place a portion of filling on one half of each circle. Fold over to form a half-moon, crimping the edges firmly with a fork.
  6. Brush kibinai with beaten egg. Bake at 200°C for 25 to 30 minutes until golden brown. Serve hot.

Tip from the editors. Add water to the filling to keep it juicy; Karaim kibinai are not dry. Use lamb or mutton, not beef, for the proper flavour.
