Ingredients

  • 4 Swedish potatiskorv (potato sausages), or substitute frankfurter with high pork content
  • 4 soft hot dog buns
  • 200g shrimp salad (cold-water prawns, mayonnaise, dill, finely chopped onion)
  • 120g mashed potato, very smooth and warm
  • Swedish senap (mild yellow mustard)
  • Tomato ketchup
  • 60g fried crispy onions (rostad lok)
  • 1 small dill pickle, finely diced
  • 1 tbsp finely chopped chives

Method

  1. Heat sausages in barely simmering water for 8 minutes; never boil or the skins split.
  2. Warm the buns in the same water vapor by holding them above the pot for 30 seconds.
  3. Open each bun and squeeze a generous zigzag of yellow mustard inside, then ketchup.
  4. Slide a sausage into the bun.
  5. Pipe a thick stripe of warm mashed potato along one side of the sausage.
  6. Top the potato with a heaped spoon of shrimp salad. This is the special part of halv special.
  7. Scatter crispy fried onions, diced pickle, and chives across the top. Eat immediately, walking.

Tip from the editors. The mashed potato must be warm and the shrimp salad cold; that hot-and-cold contrast is the entire point of the dish.
