Mississippi catfish farming exploded in the 1960s in the Delta and Memphis quickly became the urban hub for farmed-catfish frying. Most Memphis Southern restaurants carry it; the Four Way and Soul Fish Cafe in Cooper-Young codified the fried catfish lunch plate, and Tug's Casual Grill in Harbor Town does the riverside version.

Ingredients

  • 800g catfish fillets, cut into strips
  • 200g yellow cornmeal
  • 50g all-purpose flour
  • 20g paprika
  • 10g garlic powder
  • 5g cayenne
  • Salt and pepper
  • 500ml buttermilk
  • Vegetable oil for frying

Method

  1. Soak catfish strips in buttermilk for 15 minutes.
  2. Combine cornmeal, flour, paprika, garlic powder, cayenne, salt and pepper in a shallow dish.
  3. Heat oil to 180C in a heavy pot.
  4. Drain each strip from buttermilk and dredge in the cornmeal mix. Press the coating on.
  5. Fry strips in batches of four for 4 minutes until golden. Drain on paper towels.
  6. Serve hot with hush puppies and slaw.

Tip from the editors. Mississippi farmed catfish is mild and clean; use it over wild for a Memphis-style fry. Cornmeal first, not flour.
