Foul (ful medames)

History

Ful medames is a stew of cooked fava beans served with olive oil and cumin, and its place of origin is Egypt. Some writers trace it to ancient Egypt, and it is mentioned in the Jerusalem Talmud, so the dish is old in the Middle East. It spread across the Arab world and Africa, reaching Sudan among many other countries. In Abu Dhabi, Abu Al Afwal has served Sudanese food in Al Zahiyah since 1975, and FACT magazine singles out its ful medames. Khaleej Times said diners scooped the creamy foul with bread on a 2025 food walk.

Ingredients

  • 250g dried fava beans, soaked overnight, or 2 tins of cooked fava beans
  • 3 garlic cloves, crushed
  • 1 teaspoon ground cumin
  • Juice of 1 lemon
  • 4 tablespoons olive oil
  • Salt
  • Chopped tomato, parsley and flatbread, to serve

Method

  1. Drain the soaked beans, cover with fresh water and simmer for 1 hour 45 minutes until very soft. For tinned beans, simply warm them in their liquid.
  2. Drain, keeping a little of the liquid. Mash about half of the beans roughly with the garlic, cumin and 1 teaspoon of salt.
  3. Stir in the lemon juice, a splash of cooking liquid and half the oil.
  4. Spoon into bowls, pour over the rest of the oil and top with tomato and parsley. Serve with warm bread.

Tip from the editors. Mash only half the beans so the dish keeps texture, and add the lemon at the end because acid slows softening while the beans cook.
