History

Fish tacos travelled north from Baja California with San Diego's surf crowd in the 1980s and settled along the whole Californian coast. On the Central Coast they carry local logic: the fleet lands at Morro Bay and Avila twenty minutes from San Luis Obispo, and downtown kitchens fold the catch into tacos, with Luna Red's fish tacos among the plaza's most-ordered plates on market nights.

Ingredients

  • 500 g firm white fish such as rockfish or mahi
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt
  • 8 corn tortillas
  • 200 g white cabbage, finely shredded
  • 120 ml soured cream
  • 1 lime, juiced, plus wedges
  • 1 tbsp mayonnaise
  • Fresh coriander
  • Hot sauce
  • 2 tbsp oil

Method

  1. Season the fish with cumin, paprika and salt and rest 10 minutes.
  2. Stir soured cream, mayonnaise and half the lime juice into a crema.
  3. Toss the cabbage with the remaining lime juice and a pinch of salt.
  4. Sear the fish in hot oil for 2 to 3 minutes per side, then flake into large pieces.
  5. Warm the tortillas, load with fish, cabbage and crema, and finish with coriander and hot sauce.

Tip from the editors. Rockfish is the local Central Coast choice; do not overload the tortillas or they split at first bite.
