History

Cracked refers to the mallet work, not the batter: Bahamian cooks beat the muscle until the fibres break down, which is the only way to get a tender result from a mollusc built to live inside a fortress. The technique arrived with Bahamian settlers in the 1800s and stayed on Key West menus long after the local fishery closed. Since Florida's 1985 harvest ban the meat has been imported from the Caribbean, and the difference between a good plate and a bad one is entirely in the pounding. Conch Republic Seafood Company serves it with an orange horseradish marmalade; B.O.'s Fish Wagon fries it in a driftwood shack at Caroline and William.

Ingredients

  • 600g conch meat, cleaned
  • 150g plain flour
  • 50g fine cornmeal
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt, half tsp cayenne
  • 2 eggs, beaten with 3 tbsp milk
  • Neutral oil for shallow frying
  • 2 key limes, cut into wedges

Method

  1. Lay each piece of conch between two sheets of clingfilm and pound with a mallet until roughly 5mm thick and visibly relaxed.
  2. Mix the flour, cornmeal, paprika, garlic powder, salt and cayenne in a shallow dish.
  3. Dip each piece in the egg wash, then press firmly into the seasoned flour on both sides.
  4. Heat 1cm of oil in a heavy pan to 190C.
  5. Fry in batches for 90 seconds a side. Any longer and the conch tightens back up.
  6. Drain briefly and serve at once with lime wedges.

Tip from the editors. Pound it further than feels sensible. Undercooked-looking conch is fine; overcooked conch is a rubber band and cannot be rescued.
