Ingredients

  • 1.2kg bison short ribs
  • 2 tbsp oil, salt and pepper
  • 1 onion, 2 carrots, 2 celery sticks, chopped
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 500ml amber ale
  • 500ml beef or game stock
  • 2 bay leaves and a thyme bundle

Method

  1. Season and sear the ribs hard on all sides, then remove.
  2. Brown the vegetables, add garlic and tomato paste, then deglaze with the amber ale.
  3. Return the ribs, add stock and herbs, cover and braise at 150C for 3 to 3.5 hours until the meat gives.
  4. Rest, skim, and reduce the braising liquid to a glaze before serving.

Tip from the editors. Braise in amber ale rather than red wine; the malt sweetness flatters bison where tannin fights it.
