History

Gaziantep counts around twenty kinds of lahmacun, and the local argument with Şanlıurfa is about thickness and heat. The Antep version rolls the dough thinner, uses more isot in the mince and takes less time in the oven, so it comes out crisp rather than pliable. It is street food and a starter rather than a meal: kebab houses send lahmacun out free while the grill works, and dedicated bakeries sell it by the piece to be eaten standing. The mince is traditionally hand-chopped with tail fat rather than machine-ground, which is what keeps it juicy on such a thin base.

Ingredients

  • 400g plain flour
  • 240ml warm water
  • 7g instant yeast
  • 1 tsp salt
  • 300g lamb shoulder, hand chopped
  • 50g lamb tail fat, chopped
  • 1 onion, very finely chopped
  • 2 tomatoes, grated
  • 1 green pepper, finely chopped
  • 1 tbsp hot pepper paste
  • 1 tbsp isot
  • Large handful parsley, chopped
  • Lemon wedges, to serve

Method

  1. Mix flour, water, yeast and salt into a soft dough and prove for one hour until doubled.
  2. Combine the lamb, tail fat, onion, tomato, pepper, pepper paste, isot and parsley into a loose paste. Do not add water.
  3. Heat an oven with a stone or heavy tray inside to its maximum, at least 280C.
  4. Divide the dough into 8 and roll each piece as thin as you can, about 22cm across.
  5. Spread a thin, even layer of the meat mixture right to the edge of each round.
  6. Bake one at a time for 4 to 6 minutes until the edges blister and the meat has just set.
  7. Squeeze lemon over, add parsley, roll and eat immediately.

Tip from the editors. Spread the meat thinly enough to see the dough through it. A thick layer steams the base instead of crisping it.
