Analı kızlı translates as with mother and daughter, and the name describes the bowl rather than any legend: the large stuffed bulgur dumplings are the mothers, the small unstuffed ones the daughters. It belongs to the same family of yoghurt-based Gaziantep soups as yuvalama, and it is similarly a dish of occasions rather than a weekday plate. The stuffed dumplings carry minced lamb and walnut, the small ones are plain bulgur, and both go into a broth thickened with yoghurt and chickpeas. Hışvahan is one of the restaurants that keeps it on a permanent menu rather than making it only for feasts.

Ingredients

  • 300g fine bulgur
  • 60g semolina
  • 300ml warm water
  • 1 tsp salt
  • 250g minced lamb
  • 1 onion, finely chopped
  • 60g walnuts, chopped
  • 1 tbsp hot pepper paste
  • 200g cooked chickpeas
  • 1 litre lamb stock
  • 600g full fat yoghurt
  • 1 egg
  • 1 tbsp cornflour
  • 30g butter
  • 1 tbsp dried mint

Method

  1. Knead the bulgur, semolina, salt and warm water for 10 minutes into a workable dough and rest it for 15 minutes.
  2. Cook the onion, brown the lamb, stir in the pepper paste and walnuts, then cool.
  3. Shape half the dough into 12 large hollow dumplings and fill them with the lamb mixture.
  4. Roll the remaining dough into small plain balls the size of a hazelnut.
  5. Simmer the stock, poach the large dumplings for 10 minutes and the small ones for 5, then lift out.
  6. Whisk yoghurt, egg and cornflour smooth, temper with hot stock and stir into the pan over low heat until thickened without boiling.
  7. Return the dumplings and chickpeas, warm through, and finish with mint butter.

Tip from the editors. Poach the two sizes separately. Cooked together, the small ones fall apart before the large ones are done.
