History

Ali Nazik is the dish most often used to introduce Gaziantep cooking abroad, and the city treats it as its own. The name is usually traced to an Ottoman court visit and a compliment paid to the cook, though the versions of that story do not agree on the detail. What is consistent is the method: the aubergine is burned directly on charcoal until the skin collapses, then peeled while hot and worked into thick yoghurt with raw garlic so it stays warm and loose. The lamb goes on last with butter and pepper. Every kebab house in the city serves it, and the differences are in how much garlic and how much smoke.

Ingredients

  • 3 large aubergines
  • 300g thick strained yoghurt
  • 3 garlic cloves, crushed to a paste
  • Salt
  • 300g lamb shoulder, cut small, or minced lamb
  • 40g butter
  • 1 tsp hot pepper flakes
  • 1 tbsp tomato paste
  • Flatbread, to serve

Method

  1. Char the aubergines whole directly on a gas flame or over charcoal until the skins are black and the flesh has collapsed.
  2. Peel while still hot, drain the flesh in a sieve for 10 minutes, then chop coarsely.
  3. Warm the yoghurt gently with the garlic and salt, then beat in the aubergine. Keep it warm but do not boil it.
  4. Sear the lamb hard in a dry pan until browned, then add the butter, tomato paste and pepper flakes and cook for 5 minutes more.
  5. Spread the aubergine yoghurt on a warm plate, spoon the lamb and its butter over the top, and serve with flatbread.

Tip from the editors. Drain the aubergine properly. Any water left in it will split the yoghurt and turn the base grey.
