History

Wegmans Food Markets was founded in Rochester by John Wegman in 1916 as a single grocery store. The company grew to over 100 stores while remaining Rochester-headquartered and family-owned. The submarine sandwich counter, present at every location, became a regional institution because Wegmans bakes its own Italian bread daily and operates an unusually well-stocked deli. Rochester expats consistently cite the Wegmans sub as the local food they miss most.

Ingredients

  • 1 large Italian sub roll, split lengthwise
  • 4 ounces ham or capicola
  • 4 ounces salami
  • 4 ounces provolone
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • Shredded iceberg lettuce
  • Sliced tomato
  • Sliced banana peppers
  • Salt, pepper, and dried oregano

Method

  1. Drizzle both cut sides of the roll with olive oil and red wine vinegar.
  2. Layer provolone on the bottom half, then cold cuts.
  3. Top with lettuce, tomato, and banana peppers. Season with salt, pepper, and oregano.
  4. Press together and slice in half.

Tip from the editors. The bread is the critical variable. Wegmans uses a soft Italian roll with a slightly crisp crust; a standard deli roll is the closest home substitute.
