Joya's Cafe opened in Old Worthington in 2022 by Chef Avishar Barua, a 2024 James Beard Best Chef Great Lakes semifinalist. Named for his mother, the cafe runs Bengali American daytime cooking with the breakfast plate as the morning anchor: spiced eggs, chana masala and house chai, drawing from his Bangladeshi parents' home cooking.

Ingredients
- 4 large eggs
- 1 onion, finely diced
- 1 tomato, finely chopped
- 2 garlic cloves, minced
- 1 green chili, finely chopped
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 2 tbsp ghee or neutral oil
- Fresh cilantro to garnish
- Basmati rice, cooked
- Salt to taste
Method
- Heat ghee in a skillet over medium heat. Add cumin seeds and let them sputter, 30 seconds.
- Add onion and saute until golden, 6 minutes. Stir in garlic and green chili; cook 1 minute.
- Add tomato and cook until soft and saucy, 4 minutes. Stir in coriander, turmeric and salt.
- Crack the eggs directly into the spiced tomato sauce. Cover and cook 4 minutes until whites are set but yolks still soft.
- Sprinkle garam masala and chopped cilantro over the eggs.
- Serve over warm basmati rice, with chana masala on the side and a cup of cardamom chai.
Tip from the editors. Let the eggs cook gently in the spiced tomato so the yolks stay runny; the rice underneath soaks up both the yolk and the masala.
