History

Hoyo's Kitchen, named for the Somali word for mother, opened at North Market in Columbus in 2014 by brothers Abdilahi and Mohamed Hassan with their mother Hayat Dalmar. The sambusa, related to the Indian samosa, became Columbus's mainstream Somali food introduction. Hoyo's expanded to Dublin's Bridge Park location.

Ingredients

  • 300g all-purpose flour
  • 180ml warm water
  • 1 tbsp vegetable oil
  • 1 tsp sea salt
  • 500g ground beef or chicken
  • 1 large onion, finely diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp ground cloves
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Oil for deep frying

Method

  1. Mix flour, water, oil and salt to a smooth dough. Knead 5 minutes; rest covered 30 minutes.
  2. Brown the ground meat in a hot pan, then add onion, garlic and ginger. Cook until softened, 5 minutes.
  3. Add cumin, coriander, turmeric, paprika and cloves; cook 1 minute. Stir in cilantro, season with salt and pepper, and cool completely.
  4. Divide dough into 8 balls. Roll each into a thin 20cm circle. Cut each circle in half (16 half-moons).
  5. Form each half-moon into a cone: fold the straight edge over itself and seal with a flour paste, leaving the curved edge open.
  6. Fill each cone with 2 tbsp filling. Seal the open edge with flour paste, pressing well.
  7. Deep-fry at 175C (350F) for 4 to 5 minutes until golden and crisp. Drain on a rack. Serve hot with mango chutney or hot sauce.

Tip from the editors. Seal every edge with a flour-water paste; any opening leaks during the fry. Cool the filling completely before stuffing or the dough turns soggy.
