Ingredients

  • For the dough: 600g strong white flour
  • 100g caster sugar
  • 12g instant yeast
  • 12g ground cardamom (freshly ground from pods)
  • 1 tsp fine salt
  • 350ml warm whole milk
  • 150g unsalted butter, softened
  • 1 egg
  • For the filling: 200g unsalted butter, softened
  • 200g light brown sugar
  • 4 tbsp ground cinnamon
  • 2 tsp ground cardamom
  • pinch of salt
  • For glazing: 1 egg, beaten with 1 tbsp milk
  • Pearl sugar (parlsocker) for topping

Method

  1. Combine flour, sugar, yeast, cardamom, and salt. Add warm milk and egg. Mix to a shaggy dough.
  2. Knead in the soft butter piece by piece until silky, about 10 minutes. Cover, prove 60 minutes until doubled.
  3. Beat all filling ingredients into a thick paste.
  4. Roll dough into a 60cm x 40cm rectangle, 5mm thick. Spread the filling evenly to the edges.
  5. Fold the dough in three like a letter. Cut into 6 wide strips (around 6cm each). Twist each strip into a tight knot.
  6. Place each on a baking sheet at least 12cm apart; they spread substantially. Prove 60 minutes.
  7. Heat oven to 200C. Brush each knot with egg wash and shower with pearl sugar.
  8. Bake 18 to 22 minutes until deep golden and the filling has pooled into the dough. Cool 10 minutes before eating.

Tip from the editors. Cardamom must be freshly ground from green pods; the pre-ground supermarket version loses 80 percent of its perfume within weeks.
