History

Catfish came out of the Tennessee River and its feeder creeks long before it came out of farm ponds, and fried fish houses became a fixture of Black Chattanooga's dining life. The local signature is the lemon-pepper dusting applied straight out of the fryer, a style Roadfood pilgrims now drive hours for. River-view restaurants keep it on the menu beside oysters, while the counters around MLK Boulevard sell it as a sandwich on white bread with hot sauce.

Ingredients

  • 4 catfish fillets, about 180g each
  • 250ml buttermilk
  • 150g fine cornmeal
  • 50g plain flour
  • 1 tbsp paprika
  • 1 tsp cayenne
  • 1 tsp garlic powder
  • Lemon pepper seasoning
  • Salt
  • Neutral oil for frying

Method

  1. Soak the fillets in buttermilk with a pinch of salt for 20 minutes to sweeten the fish.
  2. Mix cornmeal, flour, paprika, cayenne, garlic powder and 1 teaspoon of salt in a tray.
  3. Drag each fillet through the cornmeal mix, pressing the crust on both sides.
  4. Fry in 3cm of oil at 175C for 3 to 4 minutes per side until deep gold and crisp.
  5. Drain on a rack and dust immediately and generously with lemon pepper. Serve with slaw, white bread and hot sauce.

Tip from the editors. Season with lemon pepper in the first 30 seconds out of the oil so it sticks; a squeeze of fresh lemon on top doubles the effect, not replaces it.
