Bun thit nuong is a Southern Vietnamese staple and a Saigon lunchtime workhorse, a dish built to be light and cooling in the heat. Cold noodles carry the smoke of grilled pork marinated in lemongrass, garlic, fish sauce and sugar, and the whole bowl is unified by nuoc cham rather than a hot broth. Sidewalk specialists like the Chi Tuyen stall on Co Giang have run for decades on this one dish, grilling pork over charcoal through the lunch rush. Ingredients

  • 300g pork shoulder, thinly sliced
  • 1 stalk lemongrass minced, 2 garlic cloves, 2 tbsp fish sauce, 1 tbsp sugar, 1 tsp oil
  • 200g rice vermicelli, cooked and cooled
  • Lettuce, mint, coriander and bean sprouts
  • 1 cucumber, julienned, plus pickled carrot
  • 2 tbsp crushed roasted peanuts
  • Nuoc cham to dress

Method

  1. Marinate the pork in the lemongrass, garlic, fish sauce, sugar and oil for at least 30 minutes.
  2. Grill or pan-sear the pork over high heat until charred at the edges.
  3. Divide the cooled vermicelli into bowls and top with lettuce, herbs, cucumber and pickled carrot.
  4. Lay the grilled pork over the noodles and scatter with peanuts.
  5. Pour over nuoc cham to taste and toss everything together before eating.
