Big City Burrito's counter on South College Avenue built its name on the potato burrito, an unorthodox move that swapped rice for crisp seasoned potatoes and turned a cheap student feed into a civic institution. The Fort Collins original still opens at 07:00 and runs the drill all day: tortilla, potatoes, beans, cheese, and the essential green chile smother. It is the closest thing the city has to a native fast food.

Ingredients

  • 400g waxy potatoes, diced 1cm
  • 2 tbsp neutral oil
  • 1 tsp smoked paprika, 1 tsp garlic powder, salt
  • 2 extra-large flour tortillas
  • 200g refried or whole pinto beans, warmed
  • 120g grated cheddar or jack
  • 300ml green chile (see the Colorado green chile recipe)
  • Optional: sour cream, hot sauce

Method

  1. Toss the potatoes with oil and spices and roast at 220C for about 25 minutes until crisp.
  2. Warm the tortillas, then layer beans, potatoes and most of the cheese down the centre.
  3. Roll tightly, seam down, into fat parcels.
  4. Ladle hot green chile over the top, scatter the last cheese, and grill 2 minutes until molten.

Tip from the editors. Crisp potatoes are the whole point; roast them dark and add them last so they stay crunchy under the smother.
