The mid-century room plays it straight, burgers and all, which makes the spiked shake feel less like a gimmick than a restoration. Big Al's, a few blocks away on Mountain Avenue, keeps the alcohol-free hand-scooped tradition running for purists.

Ingredients

  • 6 large scoops vanilla ice cream
  • 120ml whole milk
  • 60ml bourbon or coffee liqueur
  • 1 tsp vanilla extract
  • Whipped cream and a pinch of flaky salt to top

Method

  1. Chill two glasses in the freezer.
  2. Blend ice cream, milk, spirit and vanilla in short pulses until thick but pourable.
  3. Pour into the cold glasses and top with whipped cream and salt.
  4. Serve immediately with a straw and a spoon.

Tip from the editors. Blend in pulses and stop early; alcohol lowers the freezing point, so an extra ten seconds turns the shake to soup.
