Ingredients

  • 4.5kg pale ale malt
  • 300g Munich malt
  • 200g Caramunich malt
  • Mash bittering: 30g Columbus hops (60-minute boil)
  • Flavour: 30g Centennial (15-minute boil), 30g Cascade (10-minute boil)
  • Aroma: 50g Citra (flame-out), 50g Simcoe (flame-out)
  • Dry hop: 60g Citra, 60g Mosaic, 30g Amarillo (in fermenter)
  • Yeast: US-05 American Ale or WLP001 California Ale
  • Water adjusted to a sulphate-forward profile (200 ppm SO4, 50 ppm Cl)

Method

  1. Mash crushed grains at 65C for 60 minutes in 14 litres of brewing water. Sparge with 75C water to collect 25 litres of wort.
  2. Boil for 60 minutes. Add Columbus at start, Centennial at 15 minutes left, Cascade at 10 minutes left.
  3. At flame-out, add Citra and Simcoe and let steep 20 minutes before cooling.
  4. Chill rapidly to 19C. Transfer to a sanitised fermenter, pitch yeast, and ferment at 19C for 6 days.
  5. Dry-hop with Citra, Mosaic, and Amarillo. Hold at 19C for 3 more days.
  6. Cold-crash to 1C for 48 hours to drop yeast and hop trub.
  7. Package with priming sugar for 2.4 vol CO2 if bottling, or force-carbonate kegs to 2.4 vol over 5 days.
  8. Drink within 8 weeks; West Coast IPA hop character fades quickly and 6 weeks from packaging is peak.

Tip from the editors. The Gothenburg West Coast style runs drier and cleaner than the American template; do not push specialty malts beyond 10 percent or you lose the characteristic crispness.
